Beets like a slightly alkaline, well-drained, cool soil with good levels of potassium, and a sunny location. Sow seeds directly in the garden when soil temperature is about 18-24°C (65-75°F) for optimal germination. Succession sow every two weeks until summer. Thin to 7.5cm ( 3”) apart; use the delicious thinnings in soups or salads. Keep beets well-watered during the growing season and harvest when the roots are about 5-7.5cm (2-3”). The greens can be eaten like spinach; use the cooked roots as a vegetable or in salads.
